Enjoy the CineCHEF competition’s winning recipe!

The Boulder International Film Festival got a little bit foodier this year – in addition to showcasing incredible film, they also provided a platform for local chefs to showcase their culinary masterpieces in the first ever CineCHEF competition.

Participating chefs based their small plate creations off a movie or movie theme, which were then voted on by attending guests.

Chef Bradford Heap proudly took home the BIFF award for “Best Boulder CineCHEF, BIFF 2015.”

We are pleased to share the recipe for this delicious spring small plate, a perfect dish to share with friends and family at your backyard party!

2oz. Sockeye Salmon [at SALT, we get ours from the sustainable and eco-friendly folks at Skuna Bay]
1 tbsp Cucumber
1 tbsp Avocado
Cilantro
Jalapeño
1 tsp Lime Juice
1 tsp Fish Sauce
1 tsp Sesame Oil
1 tsp Soy
Taro Root
Toasted Sesame Seeds

Small dice the salmon, avocado, and cucumber and mix together with finely diced cilantro. Add liquid ingredients. Toss and mix well. Add toasted sesame seeds. Thinly slice taro root. Take sliced taro root and fry (for best results use fryer – remove quickly). Serve with roasted jalapeño.
