Our senior mixologist guru has caught fire it seems, taking home a second title in mixology since his last win at the Boulder’s Best Mixologist competition in April. Conor McDermott wowed the judges and attendees alike last Monday the 24th at the Moovers and Shakers Cocktail Competition put on by the J&L Distillery. Conor’s cocktail, “Can’t Beet the Sno”, features J&L’s Sno Vodka, and SALT’s famous marinated beets, and it took the top prize over five other entrees from Boulder’s bartending elite.
We’ve published the recipe below you’d like to attempt to replicate Conor’s mastery at home, however if the process of roasting, marinating, and pureeing beets seems a little too daunting for your inner bartender, you can always come and get the real deal anytime at SALT! Extra virgin olive oil
1 quart orange juice
3 tablespoons honey
Peel and roast beets with olive oil and salt, chop, and set aside. Reduce one quart orange juice by half and add honey. Toss with chopped beets. Puree with a little water.
Can’t Beet the Sno
1.5 oz Sno Vodka
1oz beet puree
1 oz fresh lime juice
0.75 oz Cointreau
0.5 oz simple syrup
1/2 rosemary sprig (just the needles)
2 bar spoons fat free greek yogurt
Shake all ingredients with ice, double strain, and serve up with flamed orange zest.
