Born on Long Island, New York, in the town of West Islip, Zach was raised in a large Italian household, and he began cooking with his family as far back as he can remember. Being close to the ocean for a large part of his childhood, he remains in love with seafood to this day and through his years of food service and dedication to his culinary career, Zach has received exposure and training in many different techniques and cookery preparations.
Zach’s pastry exploration began in culinary school, where he discovered not only talent but a sense of purpose on the sweeter side of cooking. Zach began at SALT in December of 2012, and has since created some of our most adored desserts such as the decadent Chocolate Lava Cake and the Honey Pine Nut Tart. In his free time he can be found hiking, bicycling, lazing at the reservoir, or at any of the many coffee shops in town studying bread and pastry.
