Butternut Squash Bisque – coconut milk – candied pepitas – feauxgurt

Steak Tartare– olive – tomato – parmesan – crunchy quinoa – peppercress – evoo

 

SECOND COURSE

Crispy Sea Bass – chorizo – clams – fingerling potatoes – herb pistou – brodetto

Cassoulet – squash – chard – bean medley – fennel – oyster mushroom – gf breadcrumbs

Crispy pork belly – celery root puree – rioja jus – green apple – Manchego – chive shoots

Risotto Nero – seared scallops – toasted garlic – sundried tomato – squid ink

First Light Wagyu Strip – creamy herb gnocchi – grilled napa – micro greens – crispy leeks

Mary’s Duck Confit – frisee – pomegranate – blood orange – farro – ???

 

THIRD COURSE

SALT Chocolate Tart espresso gelato – berry coulis

Amaretto Cheesecake – cranberry coulis – orange – spritzer cookie – candied peel
