The House Ketchup

Recipe makes approximately one quart of ketchup.

28 oz canned Tomatoes
2 large onions (roughly chopped)
4 garlic cloves (chopped)
3 cups cider vinegar
1 cup brown sugar
1 bay leaf
Dash mustard seed
Dash all spice
Salt to taste

Sweat onion in pot until translucent. Add garlic, brown sugar, and vinegar and cook for roughly five minutes. Add tomatoes and spices and cook down until thick. Puree and strain.
