Steak Tartare

This famous French dish is brought into question among many (as is the legend of it’s origin!), however, when prepared with fresh, quality ingredients, this dish is light, nutritious and safe to eat. It offers an air of sophistication and elegance, and melds flavors in a way that always satisfies the palate. This simple recipe makes enough for an appetizer for two, but can easily be multiplied to fit the number you care to impress!

5oz Pasture-Raised beef filet
1 egg yolk
1/4 cup minced cornichones
1 minced shallot
1 tbsp. mustard
1/4 cup grated fresh horseradish
3 tbsp minced olives
1 tbsp olive oil
1 tbsp fresh chopped parsley

Brunoise the beef (julienne, then tun a quarter and dice again to create small cubes)
Mix with all other ingredients, salt and pepper to taste.
Serve just after preparation to preserve freshness, with toast points.
