SALT’s Green Tea Pickled Watermelon Rinds

watermelon3 Thai Chilies
4 bags of Celestial Seasonings Ginger Peach Green Tea
1 cup of Sugar
1 cup Water
½ cup of Rice Vinegar
½ cup of White Vinegar
Juice of 1 lime
2 tablespoons Soy Sauce
2 Garlic Cloves
1 teaspoon whole Coriander Seed
1 teaspoon Whole Cumin
Zest of ¼ Orange
Juice of 1 Lemon
1 quart Watermelon Rind
Combine all ingredients except watermelon rind and bring to a boil.
Peel watermelon and slice off the rind, leaving on ¼ inch of watermelon for color. Strain liquid 10 minutes after it comes to a boil. Pack watermelon rinds in sterilized jars and pour hot liquid over rind. Put lids on and refrigerate.
Let sit for 5 days before using.
