Strawberry Grapefruit Salad

Housemade Strawberry Vinaigrette

20 Strawberries

3 tbsp Dijon Mustard

1/3 cup Balsamic Vinegar

1 cup Pomace Oil

salt to taste 

 

Wash and hull the strawberries. Roast the berries in oven on half sheet tray with oil and salt for 15 minutes. Let cool. Blend strawberries, dijon, and vinegar in blender till smooth. Slowly pour in the oil until emulsified-adjust as necessary. Salt to taste. Toss over organic arugula, torn basil, Broken Shovels chevre, and grapefruit wedges.
